I think half the battle with healthy eating is all the work involved preparing foods from scratch, so I just love this really quick and easy, tasty fresh soup, which can be quickly boiled up, blitzed and on the table within fifteen minutes. It’s an ideal recipe for a quick and ‘clean’ lunch and a real crowd pleaser when served with a crusty artisan loaf as a hearty starter at a dinner party.
Knob of Butter
1 Medium Onion, Diced
400g Frozen Petit Pois
500ml Vegetable Stock
Handful of mint leaves, chopped
Plain Yoghurt optional
Heat the knob of butter in a large saucepan and add the onions. Saute onions until soft, but do not brown.
Add the frozen peas and stir.
Add 500ml of boiling vegetable stock and leave to simmer for ten minutes.
Leave to cool for a couple of minutes, add the mint leaves and blend until completely smooth. Add a little water if consistency is too thick.
Serve with a swirl of plain yogurt and mint leaves if desired.
